Easy Risotto with Asparagus

Ingredients:

  • Arborio rice or risotto

  • Butter

  • White Onion

  • Minced Garlic

  • Chicken broth

  • Asparagus

  • Parmesan Cheese (Optional)

  • Smoked Paprika (Optional)


Directions:

  1. Sauté onions and garlic in oil or butter for 5 minutes

  2. Toss in a cup of rice (Arborio or Risotto)

  3. Toast that mix with butter, onion, garlic for 3-5 minutes

  4. Slowly add one cup of chicken broth until mostly absorbed. Repeat until texture is to your liking (for 1 cup of rice = 3-4 cups of broth. For 2 cups of rice = 6 cups of broth)

  5. Toss asparagus or whatever vegetables you want in after the first cup of broth is absorbed

  6. Option to add in shredded Parmesan once everything is cooked and warm, but you can play with whatever flavors you want


    *Extra topping option: smoked paprika to add some color to the dish!
